Butter Beans with Kale

Creamy Butter Beans with Kale 



Ingredients


  • 2 cans butter beans, drained and rinsed
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 4 cloves garlic, minced or 2 teaspoons of jar garlic
  • 1½ cups chopped kale, tough stems removed
  • 1 cup low-sodium chicken broth
  • ½ teaspoon paprika
  • already cooked chicken pieces if wanted
  • mushrooms if wanted
  • ⅓ cup plain Greek yogurt
  • ¼ cup grated Parmesan
  • Juice of ½ lemon
  • Black pepper
  • Salt only if needed


1. Get everything ready first.

Drain and rinse the butter beans. Dice your onion, chop the kale, and mince the garlic. Measure everything before you start so you’re not frantically hunting for paprika while the garlic burns.


2. Cook the onion.

Put a large skillet over medium heat. Add the tablespoon of olive oil.


Once the oil is warm, add the diced onion. Cook for about 5–7 minutes, stirring every minute or so. 


You’re looking for the onion to become soft and translucent, with perhaps a little golden color around the edges. Don’t rush it with high heat.


(If including mushrooms, add now)


3. Add the garlic and paprika.

Add:


  • 4 cloves minced garlic
  • ½ teaspoon paprika
  • A few grinds of black pepper


Stir constantly for only 30–60 seconds.


You’ll smell the garlic—that’s your cue to move on. Don’t let it brown or burn.


4. Add the butter beans.

Add both cans of drained and rinsed butter beans.


Gently stir them through the onion mixture and cook for about 2 minutes over medium heat.


We aren’t really cooking the beans—they’re already cooked. We’re just warming them and letting them pick up some flavor.


5. Add the chicken broth.

Pour in 1 cup chicken broth and stir.


Bring it to a gentle simmer. Once you see small bubbles, turn the heat down to medium-low.


Let it simmer uncovered for about 6–8 minutes.


Smush about ¼–⅓ cup of the beans against the side of the pan. Stir those mashed beans back in.


That releases their starch and makes the broth naturally thick and creamy without needing loads of cheese or cream.


6. Add the kale. (and/or chicken pieces)

Stir in the 1½ cups chopped kale.


At first it’ll look like you’ve added way too much. You haven’t. 


Cook 3–5 minutes, stirring occasionally, until the kale has wilted and softened but is still green.


If things become too thick, add another splash of chicken broth—about 2 tablespoons at a time.


7. IMPORTANT: lower the heat before the yogurt.

Turn the burner to LOW.


Let the beans stop actively bubbling for about 1 minute.


Then stir in:


  • ⅓ cup plain Greek yogurt
  • ¼ cup Parmesan


Stir gently until everything becomes creamy.


Don’t boil it after adding the yogurt. High heat can make Greek yogurt separate or look grainy.


8. Finish with lemon.

Turn off the burner.


Squeeze in the juice from ½ lemon, stir, and taste.


Then decide whether it actually needs salt. Between canned beans, chicken broth and Parmesan, you may need very little—or none.


What you’re aiming for


The finished dish should be creamy and saucy rather than soupy. The beans should remain mostly whole, with a few mashed into the broth. The kale should be tender, and you should be able to scoop everything onto a plate or into a shallow bowl without broth running everywhere.


One other thought: don’t add extra salt automatically. Rinsing the canned beans and using low-sodium chicken broth will help keep the sodium down, and Parmesan already brings quite a bit of salty flavor.
