Chicken Apple Walnut Salad
Chicken, Apple & Walnut Salad
Makes about 4 hearty servings
Ingredients
- 3 cups cooked chicken breast, chopped or shredded
- 2 hard-boiled eggs, chopped
- 2 celery stalks, finely chopped
- ½ small crisp apple, finely diced — Honeycrisp, Gala, or Granny Smith would work well
- ¼ cup walnuts, chopped
- 2 tablespoons mayonnaise
- 2 tablespoons Dijon or yellow mustard
- 2 tablespoons plain Greek yogurt (optional — adds creaminess)
- ½ teaspoon garlic powder
- ¼ teaspoon black pepper
- Small pinch of salt, if desired
- Squeeze of fresh lemon juice
Directions
Combine the chicken, chopped eggs, celery, apple and walnuts in a large bowl.
In a small bowl, stir together the mayonnaise, mustard, Greek yogurt, garlic powder and pepper. Add a squeeze of lemon.
Pour the dressing over the chicken mixture and stir until everything is lightly coated. Refrigerate for at least 30 minutes before eating.
Meal-prep tip: Toss the diced apple with a little lemon juice before adding it. That will help keep it from turning brown.
You could put it over greens, eat it with cucumber slices, or use a high-fiber wrap. The combination of chicken + eggs + walnuts gives you plenty of protein and fat for staying power, while the small amount of apple gives you sweetness without the concentrated added sugar that’s often in dried cranberries.
