Italian-Style Baked Chicken Tenders

Ingredients
- 1½ lbs chicken breast tenders
- ½ cup plain breadcrumbs
- ¼ cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon paprika
- ¼ teaspoon black pepper
- Small pinch of salt
- 1 large egg
- 1 tablespoon water
- Olive-oil cooking spray or a small amount of olive oil
Directions
Heat your oven to 425°F. Line a baking sheet with parchment paper or foil and lightly spray it with cooking spray.
In a shallow bowl, combine the breadcrumbs, Parmesan, Italian seasoning, garlic powder, onion powder, paprika and pepper.
In another bowl, beat the egg with 1 tablespoon of water.
Pat the chicken tenders dry. Dip each tender lightly in the egg mixture, then into the breadcrumbs. You only need a thin coating—press the crumbs gently onto the chicken and shake off the excess.
Arrange the tenders on the baking sheet without crowding them. Give the tops a very light mist of olive-oil spray. Bake for about 15–20 minutes, turning once if you’d like, until the thickest pieces reach 165°F internally.
