Light Chicken a La King - stove top

Light Chicken à la King (about 4 servings)


Ingredients


  • 1 tablespoon unsalted butter
  • 1 tablespoon olive oil
  • 8 oz mushrooms, sliced
  • ½ cup diced onion
  • ½ cup diced celery
  • ½ cup diced red bell pepper (optional, but adds sweetness)
  • 2 cloves garlic, minced
  • 2 cups cooked chicken breast, diced
  • 2 tablespoons all-purpose flour
  • 1½ cups low-sodium chicken broth
  • ½ cup 1% milk (or skim milk)
  • ¼ cup plain nonfat Greek yogurt (stir in at the end so it doesn’t curdle)
  • ½ teaspoon thyme
  • ½ teaspoon onion powder
  • ¼ teaspoon black pepper
  • Pinch of paprika
  • ½ cup frozen peas


Directions


  1. Sauté the vegetables in the butter and olive oil until tender.
  2. Add the garlic and cook for about 30 seconds.
  3. Sprinkle the flour over the vegetables and stir for 1 minute.
  4. Slowly whisk in the broth, then the milk.
  5. Simmer for 5–8 minutes until thickened.
  6. Stir in the chicken and peas.
  7. Remove from the heat and stir in the Greek yogurt.
  8. Taste before adding any salt—you may find it doesn’t need much.



To make it taste more like Stouffer’s


The richness comes more from the creamy texture than from extra salt. A few tricks help:


  • Add 1 teaspoon Worcestershire sauce (it contributes some sodium, but only a little across the whole recipe).
  • A tiny splash of lemon juice at the end brightens the flavor.
  • Use plenty of mushrooms—they add natural savory flavor.
  • Cook the onions until they’re sweet rather than just translucent.



Serve it over


  • Brown rice
  • Whole-wheat toast
  • Baked potatoes
  • Mashed cauliflower
  • Egg noodles (if you want the classic comfort-food version)
