Perfect Hard-Boiled Eggs
- Place the eggs in a saucepan in a single layer.
- Add cold water until the eggs are covered by about 1 inch.
- Leave the pan uncovered and turn the burner to high.
- Bring the water to a full rolling boil—big bubbles across the entire surface.
- As soon as it reaches a rolling boil:
- Turn the burner OFF.
- Put the lid on.
- Leave the pan sitting on the burner.
- Let the eggs sit, covered, for 12 minutes.
- While you wait, prepare a bowl with cold water and plenty of ice.
- After 12 minutes, transfer the eggs directly into the ice bath.
- Leave them in the ice water for 10 minutes.
- To peel, gently crack the shell all over and start peeling at the wide end
