Strawberry Cottage Cheese Bowl
Ingredients
- ½ cup cottage cheese
- ½–¾ cup strawberries, sliced
- ¼ teaspoon vanilla extract
- Cinnamon, optional
- 1–2 teaspoons chopped walnuts or pecans
- Optional: a tiny amount of your preferred sweetener if the strawberries aren’t sweet enough
How I’d make it
- Put ½ cup cottage cheese in your bowl.
- Stir in the vanilla. This tiny step helps push it from cottage cheese toward cheesecake filling.
- Slice the strawberries fairly small and fold most of them into the cottage cheese.
- Put the remaining strawberries on top.
- Sprinkle with the chopped nuts. They give you some texture and chewing satisfaction.
- Taste it before adding sweetener. Really ripe strawberries may be enough on their own.
A little trick specifically for you
Don’t blend the whole thing! We don't want Strawberry Protein Sludge.
You could even mash one or two strawberries with the vanilla first and stir that into the cottage cheese. It’ll make a pink strawberry-cheesecake-ish base while leaving the rest chunky.
And nutritionally: fruit + protein + a little fat/fiber from the nuts, without needing to exile strawberries from the kingdom.
