Cheesy Beef, Zucchini & Mushroom Bake
Makes: about 4 generous servings
Equipment: favorite skillet + 9×13 baking dish
Oven: 400°F
Ingredients
- 1½ lb zucchini, cut into thick half-moons or chunky pieces
- 8 oz mushrooms, thickly sliced
- ½ leek, thinly sliced
- 1 lb lean ground beef
- 1 Tbsp olive oil, divided as needed
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp paprika
- 1 tsp Italian seasoning
- Black pepper, to taste
- Salt, lightly and only as needed
- ½ cup marinara sauce, plus up to another ¼ cup if needed
- ¾–1 cup shredded mozzarella, divided
- 2 Tbsp grated Parmesan
Step by step
1. Get the zucchini ready.
Cut it into your substantial pieces—none of those paper-thin little zucchini coins. Sprinkle with just a little salt and let it sit for 10–15 minutes. Pat it thoroughly dry with paper towels. This draws out some moisture so our casserole doesn’t become zucchini soup.
2. Brown the zucchini.
Heat about ½ Tbsp olive oil in your skillet over medium-high heat. Add the zucchini in a reasonably uncrowded layer and let it get some browned edges, about 3–4 minutes. Don’t try to cook it completely. Remove it to a plate.
3. Cook the mushrooms.
Add the mushrooms to the same skillet. Let them sit long enough to brown before you start fussing with them. Cook about 4–5 minutes until they’ve released much of their water and gotten some color.
Add the leek during the last 1–2 minutes. Remove everything to the zucchini plate.
4. Brown the beef.
Put the ground beef into the same skillet. Break it into bite-size crumbles and cook until no pink remains. If there’s a lot of rendered fat, drain it.
Now add the garlic powder, onion powder, paprika, Italian seasoning and black pepper. Taste before adding salt.
5. Assemble.
Into your 9×13 baking dish, add:
zucchini + mushrooms/leek + seasoned beef + ½ cup marinara + about ½–¾ cup mozzarella.
Gently mix everything together.
Look at it before adding more sauce. If everything has a light coating and looks moist enough.
If it genuinely looks dry, add another few tablespoons, up to about ¼ cup more.
6. Top it.
Sprinkle the 2 Tbsp Parmesan over everything. Hold back the remaining mozzarella for later.
7. Bake.
Bake uncovered at 400°F for about 20 minutes.
Then sprinkle the remaining mozzarella over the top and return it to the oven for another 5 minutes or so, just until melted and bubbling.
8. REST IT.
Give it 5–10 minutes before scooping. This matters. The juices settle, the cheese firms slightly, and you’ll get actual servings rather than casserole lava.
🔒 Don’t Change This — And Here’s Why
Keep the zucchini chunky and brown it first. Between salting/patting it dry and browning it, we’re protecting the texture and getting rid of excess water.
Also don’t drown it in marinara. I'm not particularly fond of red sauce, and this dish doesn’t need it. The sauce is the supporting actor; beef, mushrooms and zucchini are the movie.
And keep the cheese reasonable. You want enough for creamy, cheesy bites—not so much that all those vegetables disappear underneath it.

After you’ve cooked the basic version once, then Lego Culinary may report for duty.
I can already imagine spinach or chard working beautifully. Water chestnuts could provide some Crunch Department representation. Chicken could replace the beef.
