Easy scrambled eggs


For 2 eggs:


  1. Crack 2 eggs into a small bowl.
  2. Beat them well with a fork until the whites and yolks are completely mixed.
  3. Add some black pepper. You can skip added salt entirely.
  4. Put your nonstick skillet over medium-low heat.
  5. Add about 1 teaspoon olive oil or a tiny bit of butter and spread it around.
  6. Pour in the eggs.
  7. Wait several seconds until you see the bottom beginning to set.
  8. Using a silicone spatula, gently push the cooked egg from the outside of the pan toward the center. Tilt the pan a little so the uncooked egg runs into the empty areas.
  9. Keep slowly pushing and folding. Don’t stir them frantically—we’re making fluffy eggs, not interrogating them. 😂
  10. When they’re mostly set but still look slightly shiny, turn off the heat. The residual heat will finish them.
  11. Put them on your plate right away so they don’t continue cooking in the hot skillet.


The whole cooking part will probably take only 2–4 minutes.


And if you want them cheesy, sprinkle a little shredded cheese or Parmesan over them right before they’re completely finished, fold once or twice, and you’re done.
